Fish Poached in Soy Sauce
serves 4
Ingredients
- 1/3 C soy sauce
- 1/3 C water (more if the soy is salty)
- 2 t sugar
- 15 ea scallions, cut into 2 inch lengths
- 1 ea dried or fresh chile (optional)
- 1 ½ lb 1 inch thick fish fillets
Instructions
- Combine the soy sauce, water, sugar, scallions and chile in a skillet large enough to hold the fish. Bring to boil over medium-high heat.
- Add the fish and adjust the heat so the mixture bubbles, but not furiously.
- Cook 8 to 10 minutes, turning the fish once or twice until the fish is cooked through.
